- 3 Eggs
- 1 Cup Applesauce
- 2 Cups Sugar
- 2 t Vanilla
- 2 Cups Zucchini (thinly diced)
- 1 Cup Drained Crushed Pineapple
- 3 Cups Flour
- 2 t Baking Soda
- 1 t Salt
- 1/2 t Baking Powder
- 1 1/2 t Cinnamon
- 3/4 t Nutmeg
- 1 Cup Chopped Nuts (preferably Pecans or Walnuts)
- Preheat Oven 350 degrees
- Combine Eggs, Applesauce, Sugar and Vanilla in mixer and mix until well blended.
- Once wet ingredients are mixed well, add Zucchini and Crushed Pineapple, mix well
- In a separate bowl combine all dry ingredients: Flour, Baking Soda, Salt, Baking Powder, Cinnamon and Nutmeg mix well.
- Little by little add the dry ingredients into the wet mixture. Once the mixture is complete and very well blended add in the nuts and mix one final time.
- Spray 2–5×9 Bread Pans with non-stick spray and bake 45-50 minutes or until toothpick is inserted and comes out clean
