General
- 14oz sweetened Coconut flakes
- ½ c white rum
- ¼ t Green icing die or Green Food coloring
- 12 14oz plastic cups
Chocolate Cake
- 2 ½ cups all purpose flour 1 cup of butter, softened
- 1 t baking soda 1-½ cups of granulated sugar
- ½ t salt 3 large eggs
- 7oz semi-sweet chocolate 2 t pure vanilla extract
- 1 ½ cup of milk
Buttercream Icing
- 2lb bag confectioners sugar 3/4 cup cocoa
- 2 t pure vanilla extract 2 lb bag confectioners sugar
- 5 T half & half 2 t pure vanilla extract
- ½ c butter ½ c butter
- ½ c solid vegetable shortening ½ c solid vegetable shortening
- Preheat oven 350 degrees
- In large bowl combine and mix: flour, baking soda and salt
- In a medium saucepan over low heat, melt chocolate and butter until completely melted. Stir continuously.
- Transfer melted chocolate and butter into a large mixing bowl, and using electric mixer, add sugar. Beat until well blended.
- Add vanilla, and one egg at a time until mixed well
- Finish by alternately adding flour mixture and milk, until the mixture is completely smooth
- Grease 9×13 pan and bake 20-25 minutes
- Combine all ingredients mix well 5 T half & half
- Die with Green Icing Die -Combine all ingredients mix well
- Make chocolate cake and bake 20-25 minutes. Let cake cool at least 10 minutes
- Take out the 12 plastic cups and separate
- Cut cake into 12 slices and put one slice in each cup. Smash the cupcake to fill the bottom of the cup
- Next on top of the cake layer each cup with the Green Buttercream Icing
- Put coconut flakes in a medium mixing bowl and combine with ½ cup of rum. Stir together until rum is absorbed
- Put ¼ t green die and mix into Coconut/Rum mixture until color is same throughout to create grass
- Finally sprinkle the coconut grass on top of the icing for the final layer
