- 2 Cups Uncooked Quinoa
- 1 1/2 t Minced Garlic
- 2 Cups diced fresh tomatoes
- 1/4 Cup Olive Oil
- 1 1/2 t Italian Seasoning
- 3 T Balsamic Vinegar
- 1 t Kosher Salt
- 1/4 t Ground Black Pepper
- 1/4 Cup Shredded Mozzarella Cheese
- Fresh Basil Leaves
- Cook Quinoa according to instructions making sure it remains al dente
- Drain and set out to cool
- Dice tomatoes and combine with quinoa
- Combine tomatoes and quinoa with the spices, oil and vinegar listed above
- Once all ingredients are mixed well add the mozzarella and basil
- Put in refrigerator until ready to serve
